The Heifer Answer
Fine-grained meat and delicate fat that melts on the tongue.
It is said that the more a connoisseur knows wagyu, the more they choose A5 heifer wagyu.
We call it the “Queen of Wagyu” and serve it at all of our restaurants.

01
A5 heifers only
Matsusaka and Yonezawa, Japan’s most prestigious brands, are defined by unbred heifers. Among them, we choose only A5 grade.
02
Direct from the producers
Bought directly from producers or hand-selected at market, one animal at a time.
03
Genuine Kobe beef, everywhere
Genuine Kobe beef, traceable by its individual ID number, at every one of our restaurants.
From the Producers
We visit the farms,
and select every wagyu ourselves.
We travel to producers in Yamagata and across Japan, and buy our wagyu together with the stories of those who raise it.
Our chefs then finish that story on the teppan, right before you.

Chef / Craft / Space
Beyond technique,
we value the senses.
Our chefs, trained in Japan’s finest kitchens, design every plate down to the sear, aroma, temperature and finish.
